Vegan Chickpea Pancakes

1 cup Namaste Foods Organic Garbanzo Bean Flour (chickpea flour)
1 cup filtered water
1-1/2 tablespoons olive oil
1 tablespoon fresh green onion, minced
1/4 teaspoon Himalayan pink salt
Fresh berries
Shredded coconut, unsweetened
Pure maple syrup (optional)


  1. Combine flour, water, olive oil, green onion and salt in a bowl. Whisk ingredients together until thoroughly mixed. Allow the mixture to sit for 30 minutes. Pour a heaping tablespoonful of batter onto a lightly greased nonstick skillet. Cook over medium heat until browned, about 1 to 2 minutes on each side. Top with fresh berries, kiwi and shredded coconut.
