Vegan + Gluten-Free One-Bowl Chocolate Chip Cookie Dough Bars

Ingredients

1 cup vegan butter (softened)
3/4 cup granulated sugar
1 cup light brown sugar
2 flax eggs (2 tbsp. ground flax + 6 tbsp. cool water)
2 teaspoons vanilla
1-3/4 cups Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend
1 teaspoon baking soda
1 teaspoon salt
2 cups dairy-free chocolate chips of your choice

Directions

  1. Preheat oven to 350° F. Lightly grease your square 8 X 8 baking pan.
  2. Mix together your flax 'eggs' and refrigerate for at least 15 minutes.
  3. Cream together the vegan butter and sugars until well-combined.
  4. Add in your flax eggs. Slowly add in flour, salt and baking soda. Once completely combined, fold in chocolate chips.
  5. Add your dough to the greased baking pan and bake for 25-30 minutes. (You want to pay attention to the stiffness in the center of your pan, the cookie dough bars will continue to cook once you remove them from the oven).
  6. Let stand for 1 hour in the baking pan before removing to slice and ENJOY!
