Vegan + Gluten-Free One-Bowl Chocolate Chip Cookie Dough Bars

Ingredients
1 cup vegan butter (softened)
3/4 cup granulated sugar
1 cup light brown sugar
2 flax eggs (2 tbsp. ground flax + 6 tbsp. cool water)
2 teaspoons vanilla
1-3/4 cups Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend
1 teaspoon baking soda
1 teaspoon salt
2 cups dairy-free chocolate chips of your choice
Directions
- Preheat oven to 350° F. Lightly grease your square 8 X 8 baking pan.
- Mix together your flax 'eggs' and refrigerate for at least 15 minutes.
- Cream together the vegan butter and sugars until well-combined.
- Add in your flax eggs. Slowly add in flour, salt and baking soda. Once completely combined, fold in chocolate chips.
- Add your dough to the greased baking pan and bake for 25-30 minutes. (You want to pay attention to the stiffness in the center of your pan, the cookie dough bars will continue to cook once you remove them from the oven).
- Let stand for 1 hour in the baking pan before removing to slice and ENJOY!
