Vegan Pakoras

Ingredients

1 potato, peeled and cut into 1/4" slices
1 cup fresh spinach
1 cup cauliflower flowerets
1 zucchini, peeled or unpeeled, cut into rounds
2 cups Namaste Foods Organic Garbanzo Bean Flour (chickpea flour)
1 teaspoon ground coriander
1 teaspoon cumin seeds
1/2 onion, finely chopped
1 green chili, seeded and minced
2 tablespoons fresh cilantro, finely chopped
1 teaspoon salt
1/2 cup water (more as needed)
Approx. 4 cups oil

Directions

  1. Chop vegetables and set aside. Allow to dry completely.
  2. Mix together garbanzo flour, spices, onion, chili, cilantro and water in a bowl. Add more water until batter has consistency of pancake batter.
  3. Heat oil to medium high (350-365°F.) Make oil 1" deep. Do not fry until oil is hot enough of vegetables will absorb the oil.
  4. Dip vegetables in batter one by one and add to hot oil. Leave plenty of space around vegetables. Fry until golden brown. Remove and dry on paper towels.

Notes: Delicious served with chutney. You can pre-make these and reheat in 350° oven for 5-10 minutes. Serve hot.
