Vegan Pumpkin Muffins with Streusel Topping

Makes about 18 muffins.


1 pkg. Namaste Foods Spice Cake
4 eggs or 4 Namaste Vegan Egg Replacer eggs, made as directed
1 - 15 oz can pumpkin (not pumpkin pie filling)
1/4 cup water

Streusel Topping (optional)
1/4 cup Namaste Perfect Flour Blend
1/2 cup brown sugar
1/4 cup cold butter, chopped


  1. Heat oven to 350° F. Lightly spray or grease muffin tins or use paper liners.
  2. In large bowl combine eggs or egg replacer, pumpkin and water with a wooden spoon or whisk. Add Cake mix and combine until just mixed. Note: batter will be very thick.
  3. Fill cups 3/4 full. Sprinkle 1-2 teaspoons of streusel topping if using (see below) evenly over tops. Or you can top with some turbinado sugar instead. Bake for 16-21 minutes until toothpick inserted in center comes out clean.

Streusel Topping
In small bowl combine all topping ingredients with fork until nice crumb forms. Sprinkle evenly on muffin tops before baking.
