Veggie Fritters


1 packet Namaste Foods Italian Herb Seasoned Coating Mix
3 cups coleslaw mix or grated zucchini & carrots combined
2 eggs or about 2/3 cup vegan mayonnaise


  1. Combine ingredients in medium bowl.
  2. Drop by heaping spoonful into hot oil on medium heat. Press down a little and fry until golden brown on both sides, about 3-4 minutes on each side.
  3. Drain on paper towels.


  • Dip in yogurt, sour cream, ranch or bleu cheese dressing. Garnish with chopped green onions or fresh herbs. Serve with an entree or as a healthy finger food snack for kids.
