XO Marshmallow Waffle Cone

Ingredients
1 cup Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend
6-10 gourmet XO Marshmallows
8 oz (1 stick) unsalted butter
1 cup granulated sugar
3 large eggs + 1 egg white
6 Tblsp. heavy cream
1/4 tsp. salt
2 tsp. vanilla
1/2 tsp. cinnamon
optional a few drops of natural food coloring
optional dark or white chocolate chips
Directions
- Place marshmallows on a dish, set aside. Turn on your waffle-cone maker and allow to warm up.
- To make the Batter: Place butter in a microwave-safe bowl, and melt in 30 second increments, in the microwave. Once fully melted, put aside to let cool.
- Add the flour, sugar, and eggs to a medium-sized bowl; stir to combine. Then, add heavy cream, salt, and vanilla to bowl, stirring until smooth.
- Stir in the cooled butter, followed by the cinnamon. Once incorporated, add food coloring (if you'd like!)
- Set the waffle-cone maker to medium-low. Spray lightly with cooking spray. To make the cones, add batter to the cone-maker in a single, heaping teaspoon. Cook for 2 1/2 minutes.
- Remove quickly, placing the waffle onto a thin towel (a paper towel is fine) and roll the waffle into a cone-shape. Set aside to cool and continue making cones until you've run out of batter.
- To make the Cones: Add a couple chocolate chips to the base of the cooled cone -- this will help keep anything from leaking through the bottom!
- Add a handful of XO Marshmallows, a scoop of ice cream, or both!
- Finish the cone off by toasting the marshmallows with a culinary torch, or wrapping the entire cone in foil and tossing onto the broiler (or open campfire) for a few minutes. Enjoy!
