Blueberry Oatmeal Cookies

Ingredients
1 cup butter, softened
2 cups brown sugar
2 eggs
2 teaspoons vanilla extract
3 cups gluten free dry oats
1-1/2 cups Namaste Organic Sorghum Flour
1/2 cup tapioca starch
1 teaspoon xanthan gum
1 tablespoon cinnamon
1 teaspoon salt
1 teaspoon gluten free baking powder
1 cup slivered almonds
2 cups fresh or frozen blueberries
Directions
- Preheat oven to 350° F. Cream together butter and brown sugar.
- Add eggs and vanilla.
- Sift together flours, xanthan gum, cinnamon, salt, baking soda and baking powder.
- Beat into butter / sugar mixture. Beat in oatmeal. Fold in almonds.
- Roll dough between your hands to make a balls the size of a walnut. Place onto cookie sheet and press slightly. Top each cookie with 3 or 4 blueberries.
- Bake for approximately 7-8 minutes or until golden brown on edges.
- Eat them before anyone else sees them!
