Cherry Vanilla Cake


1 package Namaste Foods Vanilla Cake Mix
1-14.5 oz. can pitted red cherries in water
3 eggs
½ cup oil
½ cup (approx) water
1 container gluten free chocolate frosting (optional)


  1. Heat oven to 350° F. Lightly spray or grease 2 round cake pans.
  2. Drain cherries and pour liquid into a 1 cup measuring cup. Add enough water to make 1 full cup. (or, if you happen to have cherry juice, use that instead.) Coarsely chop cherries and set aside. Combine eggs, oil and cherry juice. Add to Vanilla Cake mix and blend well with electric mixer or by hand. Fold in chopped cherries.
  3. Bake for approximately 35 minutes or until toothpick inserted in center comes out clean. Frost with gluten free chocolate frosting and enjoy!


  • You could use most any canned fruit such as mandarin oranges, pineapple, etc. Just follow the directions and treat your taste buds to a new sweet sensation every time!
