Chocolate Crinkle Cookies


1/2 cup (1 stick) butter, softened
1-1/2 cups of sugar

½ cup cocoa powder

4 eggs

2 tsp baking powder

1/2 tsp salt

1 tablespoon vanilla

1 cup almond flour

1-1/4 cups Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend

1/2 cup gluten free chocolate chips (optional)

  1. In large bowl, cream together butter and sugar for 5 minutes. Add cocoa powder and combine well. Add eggs one at a time. Mix in baking powder, salt, vanilla and flours.
  2. Fold in chocolate chips if using. Chill for 1 hour and roll in powdered sugar.
  3. Preheat oven to 400°F. Spray cookie sheet with non-stick spray or parchment paper (she prefers silpat cookie sheets). Bake for 8-10 minutes.
