Cinnamon Espresso Coffee Cake

A coffee lovers dream!


1 package Namaste Foods Vanilla Cake Mix
½ cup oil
1 cup water
¼ tsp. nutmeg
2 tsp. cinnamon
1 tbsp hot water
2 tbsp instant coffee granules
3 eggs
Streusel Topping (see below)
1 ½ cups Namaste Foods Cookie Mix
2 oz (¼ cup) margarine, (cut into small cubes)
¼ cup brown sugar
½ tsp cinnamon
¼ tsp nutmeg


  1. Heat oven to 350° F. Lightly spray 9x13 pan with non-stick spray.
  2. Prepare streusel topping by combining dry cookie mix, margarine, brown sugar, cinnamon and nutmeg. Mix just until dough comes together but is still crumbly. Set aside.
  3. Combine cinnamon, nutmeg, eggs, 1 cup water, oil and cake mix and set aside. Do not pour into pan yet. In a separate bowl, stir together the instant coffee and hot water, then scoop about a ½ cup of the cake batter into the coffee mixture and stir to combine.
  4. Pour half the vanilla cake batter into the pan, then randomly drizzle in lines of about half the coffee batter. Pour in the rest of the vanilla cake batter and drizzle in the rest of the coffee batter. Spoon the streusel topping over the entire top of the cake. Bake for 35-40 minutes or until toothpick inserted in center comes out clean.
