Easy Chocolate Cupcakes with Buttercream Chocolate Frosting


1 cup Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend
1/2 cup cocoa powder
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons oil, any kind
1 cup granulated sugar
2 eggs
1 cup milk, any kind
1/2 teaspoon vanilla extract

Optional Buttercream Chocolate Frosting
1/2 cup (1 cube) butter, softened
2 cups powdered sugar
1/2 cup cocoa powder
2 tablespoons warm water
1 teaspoon vanilla extract


  1. Preheat oven to 350° F and line two muffin tins with 15 cupcake liners.
  2. In a small mixing bowl, combine dry ingredients and whisk them together well.
  3. In a large mixing bowl, whisk together oil and sugar. Add your eggs, milk and vanilla and mix well.
  4. Pour your dry ingredients into your wet ingredients, and stir together till everything is well incorporated. Batter will be runny.
  5. Pour your cupcake batter into your cupcake liners, filling to 2/3 full. Bake in the oven for 14-16 minutes, or until toothpick inserted comes out clean.
  6. Let cool entirely before frosting.

Buttercream Chocolate Frosting

  1. In a large mixing bowl, beat butter with a hand mixer until creamed.
  2. Add your powdered sugar, cocoa powder, water and vanilla, and beat till smooth. If necessary, add a little more water to make the frosting smooth.
  3. Pipe on top of your cooled cupcakes, and add sprinkles, if desired.
  4. Store these cupcakes on the counter for 1-2 days, or in the fridge for one week.
