Flour Tortillas

Ingredients

3 cups Namaste Perfect Flour Blend or Namaste Organic Perfect Flour Blend
2 tsp. gluten free baking powder
2 tsp. salt
3/4 cup shortening
3/4 cup hot water

Directions

  1. Combine flour, baking powder and salt in large mixing bowl. Either by hand or with pastry cutter cut in the shortening until the mixture is crumbly. If the mixture looks more floury than crumbly, add 1 or 2 more tablespoons of shortening until it is crumbly. Add about 3/4 cup hot water to the mixture, or just enough to make the ingredients look moist.
  2. Using your hand or large fork, knead the mixture making sure to rub against the sides of the bowl to gather any clinging dough. If the dough still sticks to the side of the bowl, add a couple tablespoons of flour until the dough forms a soft round shape. Cover bowl with dish towel and allow to rest for about an hour.
  3. Pull the dough apart into 10-12 balls. Lightly flour your rolling area and roll out each ball with rolling pin to about 1/8" thickness.
  4. Place each tortilla on a medium hot cast iron skillet. Cook for 1-2 minutes on each side or until tortilla doesn't look doughy.
