Glazed Lemon Cookies


1 pkg. Namaste Foods Cookie Mix
2 lemons
2 tsp. lemon juice
3/4 cup milk (any kind)
3/4 cup butter (6 oz.), or butter substitute, room temperature
1 egg
1-1/2 cups powdered sugar
5 tsp. lemon juice


  1. Preheat oven to 400° F.
  2. Finely grate rind of both lemons and set aside. Juice the lemons. Separately measure 2 teaspoons lemon juice for the cookies and 5 teaspoons for the glaze. Combine the 2 teaspoons lemon juice and milk. Set aside for 5 minutes. In a large bowl, beat butter with electric mixer until smooth and light. Add the egg and mix well. Add the milk mixture, lemon zest and the cookie mix, blend well. Optional: chill dough for 1-2 hours to keep cookies from flattening out when baking.
  3. Drop by heaping teaspoonfuls onto sprayed/greased cookie sheet.
  4. Bake on middle oven rack for 10-12 minutes, until light brown around edges.
  5. Glaze directions: Combine powdered sugar and the 5 teaspoons of lemon juice and mix until smooth. Spread glaze on each cookie. Sprinkle with more lemon zest, if desired. Makes approximately 4 dozen cookies.
