Homestyle Smashed Potatoes

Makes 6 servings.

3 Tbsp.Namaste Foods Homestyle Coating Mix
1-1/2 lbs. potatoes, quartered
6 Tbsp. butter or margarine
1 to 1-1/2 cups milk, any kind (to reach desired consistency)
1 to 2 Tbsp. chopped chives, optional

  1. Boil potatoes in well-salted water until fork inserted goes in smooth. Drain. Return potatoes to pan over medium low heat. Add butter, milk and Homestyle coating mix and smash, leaving some chunks for added texture. Fold in chives if using. Season with salt and pepper.

  • If you're using really fresh, thin skinned potatoes, consider leaving some or all of the skin on - they're so good for you!
  • A great leftover idea: Homestyle Haystacks: Reheat a serving of mashed potatoes in the microwave. Create a well in the middle. Put a fried egg in the well. Sprinkle with chopped bacon.
  • Not sure what to do with leftover Homestyle coating mix? Add it to your next meatloaf or add to stuffing mix.
