Johnny Cakes with Blueberries


1½ cups Namaste Foods Waffle and Pancake Mix
1 egg
¾ cup water
¾ cup oil
1 Tbsp. sugar
1 Tbsp. cornmeal
½ cup blueberries, fresh or frozen (thawed)


  1. Combine all ingredients and mix well. Pour onto preheated, sprayed pan or griddle. Makes about 9 - 4 inch Johnny Cakes. As with all pancakes, may need to add more liquid to batter as it sits and absorbs moisture.
  2. Top with butter, blueberries, and a dollop of whipped cream if desired.

  • Recipe variation: Fresh raspberries or strawberries would be great, too!
