Macaroon Fudge Sandwich Cookies

Makes 12-15 sandwich cookies.


1 package Namaste Foods Cookie Mix
1 cup shredded coconut
½ cup oil (coconut oil if you have it)
2 eggs
2-3 Tbsp water, (start with 2 tablespoons, add 1 teaspoon as necessary)
1 container gluten free chocolate frosting, prepared


  1. Preheat oven to 350° F. Spray cookie sheet with non-stick spray.
  2. Combine all ingredients in large bowl. Add extra water if batter is too thick. Drop by rounded tablespoons onto cookie sheet. Bake 12-15 minutes. Cool.
  3. Frost bottom of 1 cookie with frosting and put together with another cookie.


  • You can just frost the top of the cookies instead of making sandwich cookies if you like.
