Suzy’s Easy Cranberry Pie


1 package Namaste Foods Cookie Mix
3 egg whites
½ cup butter, melted
¼ cup melted shortening or canola oil
½ cup sugar

½ - ¾ cup chopped walnuts or pecans (optional)
2 cups fresh or frozen whole cranberries
1/3 - 1/2 cup sugar (to taste)


  1. Preheat oven to 325° F.
  2. Grease 10” pie plate. Spread cranberries in the bottom then sprinkle evenly with the sugar and the nuts.
  3. Beat the egg whites well. Add the melted butter and shortening or oil. Beat well. Add the Cookie mix and beat well. Pour over the cranberry and nut mixture.
  4. Bake for approximately 45 minutes or until crust is golden brown. Cut in wedges.


  • Serving Suggestion: Can be served warm or cold. Especially delicious with whipped cream or ice cream on top. You can even add some finely grated orange zest on top!
