Taco Pasta Salad

This spicy pasta salad is a Namaste Foods staff favorite!


1 package Namaste Foods Taco Pasta Dinner
1-(15 oz.) can kidney beans (drained)
1 red or green pepper, chopped
1 cup frozen corn, thawed
1 fresh tomato, diced
2 green onions, chopped
¼ bunch fresh cilantro, chopped
½ cup sour cream
¼ cup mayonnaise
¼ cup lime juice


  1. Set aside Taco Pasta seasoning packet. Cook the pasta in boiling salted water until done, about 7-10 minutes, stirring occasionally. Drain and rinse briefly in cold water to stop the cooking process.
  2. Place pasta in large bowl and toss in seasoning packet, kidney beans, bell peppers, corn, tomato, green onions and cilantro. In separate bowl, stir together sour cream, mayonnaise and lime juice, then combine with pasta. Mix well. Refrigerate for a few hours or overnight. Season with salt and pepper to taste. Serve cold.
