Triple Chocolate Biscotti

1 package Namaste Foods Cookie Mix
2 eggs
½ cup oil
2 Tbsp. water
1/8 cup Namaste Foods Golden Flax Meal
¼ cup unsweetened cocoa powder
½ to ¼ cup chocolate chips
12-oz. bag vanilla chips
2 Tbsp. shortening
½ cup shaved dark chocolate


  1. Preheat oven to 350° F. Combine 2 eggs, ½ cup oil, and 2 tablespoons water. Add Cookie mix, flax meal and cocoa powder. Blend well. Fold in chocolate chips and divide into two equal halves.
  2. Using lightly greased jelly roll pan, pat each half into a 12” x 3” rectangle, about 1” thick.
  3. Bake for about 30 minutes, or until the cookies look done and firm. Remove and cool about 10 minutes. (No longer or it may be difficult to remove from pan). Transfer carefully to cutting board.
  4. Carefully cut into 1" wide slices and transfer to same baking pan.Turn the sliced biscotti over; bake again for 10 minutes. Remove and cool completely.
  5. Melt vanilla chips and shortening in saucepan. Carefully, but quickly dip each biscotti into the melted chocolate about halfway up and lay onto wax paper. Sprinkle with shaved dark chocolate and let stand until hardened. Store in airtight container.


  • Use any combination of butterscotch, peanut butter and milk chocolate chips. Go wild!
